Aw hell yeah it turned out delicious. This is going in the repertoire for super quick & easy dinner.
I added mandolined zucchinis because they needed eating as well as the kimchi and shallots. I forgot to chop the kimchi at all so it didn’t stick together the best but that was fine, I like having the texture of it still there. Also added some Ssamjang for extra flavour
@s0 looks good to me! 👍 Like you said, chopping the kimchi is probably a good idea lol. Love the extra ingredients you added, good way to get in some extra flavor and also to get rid of leftovers! If you don't do so already, adding about a ladle-full of kimchi water can be a way to get in extra flavor. And if you can't get enough of spice you can always slice some hot peppers in there.
